Its name is rooted in the estate’s history: legend has it that King Henri IV ordered the construction of Le Moulin in homage to a beautiful miller’s wife. A romantic origin that gives the bar its unique character and nourishes the soul of the place.

Behind the bar, Rémy Julien crafts a precise, bold and generous cocktail menu. This follows several experiences in prestigious hotel establishments, from the Hyatt group to Royal Champagne, and as head bartender at Relais Spa de Chessy.
Today, he meticulously and creatively shapes Le Moulin’s liquid universe. His approach: to balance flavours, surprise without distorting, and offer creations that adapt to every desire.
Signature cocktails, revisited classics, alcohol-free creations or bespoke compositions: each drink is conceived as a complete experience, where expertise and creativity are expressed in every detail.

The bar’s signature creations, such as Pastaga Coco, Rose Bonbon, Crépuscule, Milano and Mosquito, illustrate a creative approach where each cocktail is designed to offer a subtle balance and a distinct identity.
Les classiques
The great classics are revisited with a more contemporary touch. Peach Paloma, Pepper Spritz, Summer Pornstar or Lavender Sour offer a modern interpretation of essential recipes, blending freshness, indulgence and character. Those who prefer alcohol-free options will also find a selection of mocktails crafted with the same care.
Les mocktails
No Limit, Golden Hour, Spicy No Paloma or Fresh Mint Tea demonstrate that an alcohol-free cocktail can be as creative as a classic recipe. To go further, the bartender also creates bespoke cocktails according to your preferences, with or without alcohol, while an ephemeral creation accompanies the rhythm of the seasons.
Vins, champagnes et spiritueux
Beyond cocktails, the Henri IV bar offers a carefully selected range of wines, champagnes and spirits. A menu designed to complement both aperitifs and late-night drinks.
Gins, rums, whiskies, cognacs, armagnacs, calvados, brandies and liqueurs make up a generous cellar, offering a wide choice for connoisseurs of fine spirits.

Les soirées Jazz, Pop Soul
Every Thursday from 7 pm, the Henri IV bar hosts a new Jazz, Pop Soul programme. Settle in facing the Marne and enjoy a convivial evening, with live music, signature cocktails and a warm atmosphere.
